Tabouleh with tomatoes and fresh cucumbers

Tabouleh is one of the most popular oriental snacks. It is based on bulgur and parsley or cilantro. Therefore, during cooking, special attention should be paid to these particular ingredients. The greens should be juicy and aromatic, and the bulgur should be of the correct consistency (not boiled over). In many restaurants you can find tabbouleh with couscous, but the dish with bulgur is considered authentic. This is how tabouleh is prepared at 15/17 Bar & Grill.

Tabouleh with tomatoes and fresh cucumbers
Ingredients
  • fresh cucumbers -100g
  • Baku tomatoes - 100 g
  • quince - 50 g
  • mint leaves - 2 g
  • bulgur - 50 g
  • olive oil - 2 tablespoons
  • salt, pepper to taste
  • lemon juice to taste

STEP-BY-STEP COOKING RECIPE

Step 1
Peel the cucumbers and cut into small cubes. Also cut the Baku tomatoes into cubes.
Step 2
Prepare herbs. Chop the cilantro finely. Remove the mint leaves from the stem and also chop into small pieces.
Step 3
Put the bulgur in a container and pour hot water for a maximum of 10 minutes (the cereal should not turn into porridge). IN

Drain the water, add olive oil and mix thoroughly. Let the bulgur cool for a few minutes and add to the vegetables. Mix everything again with the addition of olive oil, salt and pepper. Add lemon juice when serving.
