Olivier salad with pork
With sausage, chicken, beef ... We offer you to cook Olivier salad with pork! The fact is that this meat is very tender and soft, so it “sounds” in the salad composition just perfect. All other ingredients of the salad are traditional: eggs, potatoes, carrots, cucumbers, peas ... But with the dressing, the situation is a little different: green onions, parsley and granular mustard are added to the usual mayonnaise, which perfectly harmonizes with the pork included in the Olivier salad. The result is a dish that can be served on any festive table, including New Year's.
Ingredients
- potatoes 1 pc.
- carrots 1 pc.
- egg 1 pc.
- pork 150 g
- salt to taste
- pickled cucumber 1 pc.
- fresh frozen green peas 70 g
- FOR LIONEZ SAUCE
- mayonnaise 3 tbsp.
- grained mustard 1 tsp
- green onions 5 g
- parsley 3 g
STEP-BY-STEP COOKING RECIPE
Step 1
Prepare the ingredients for the Olivier salad. Boil vegetables until tender and peel. Boil the pork until tender in salted water. Hard boil the egg (no more than 10 minutes).
Step 2
Allow the potatoes, carrots and eggs for the Olivier salad to cool completely. If you have time, put them in the refrigerator for 1 hour. Then peel and cut into small cubes. Place in a large deep bowl.
Step 3
Boil green peas for 5 minutes in boiling salted water and discard in a colander. So that it does not lose its bright color, pour over it several times with ice water. Add to chopped vegetables.
Step 4
Cut the cooled boiled pork for Olivier into small cubes. Add to a large bowl with prepared green peas, potatoes, carrots and eggs.
Step 5
Prepare the lyonnaise sauce for the pork salad dressing. To do this, finely chop green onions and parsley, combine with mayonnaise and granular mustard. To stir thoroughly.
Step 6
Season the salad with the resulting sauce. Leave in a cool place for 30 minutes. Then put in a salad bowl or distribute to serving plates. Decorate as desired.
