Homemade adapted Vietnamese Pho Bo soup

Fresh and exotic taste of the famous Vietnamese pho bo soup with beef and rice noodles in a homemade adaptation. By no means am I saying that this is an authentic recipe. This is, so to speak, a variation adapted to our realities. I highly recommend everyone to try cooking, all products are available. Thanks to the unusual combinations of basil and mint greens, as well as the spicy beef broth, the taste of the soup comes out simply unforgettable and very original. This pho bo soup does not take much time and effort, the longest process is the preparation of the broth, and then everything is simple, just, two, three.

Homemade adapted Vietnamese Pho Bo soup
Ingredients
  • beef bones 1 kg
  • beef 500-600 g
  • water 3.5-4 liters
  • onion 1 pc.
  • ginger 50 g
  • star anise (stars) 2-3 pcs.
  • cinnamon (sticks) 1-2 pcs.
  • peppercorns 5-8 pcs.
  • coriander 1/2 tsp.
  • cloves 3 pcs. PC.
  • salt 1-1.5 tbsp tbsp
  • sugar 1 tbsp
  • rice noodles 400 g
  • fish sauce 5-6 tbsp
  • green basil 1 bunch (s)
  • green onions 1 bunch (s)
  • mint 1 bunch (s)
  • kinza 1 bundle
  • parsley 1 bunch (s)
  • chili pepper 1 pc.
  • lime 1 pc.
  • bean sprouts 200 g
  • ginger for serving 50 g

STEP-BY-STEP COOKING RECIPE

Step 1
Wash the bones well. To fill with water. Let it boil, boil a little, drain this water, rinse the bones and the pan well. Pour water over again and cook. This will already be the broth for the pho bo soup.
Step 2
Cut the onion and ginger in half, fry well, straight until black. Also fry all the spices (star anise, cloves, cinnamon, pepper, coriander), so they better give their aromas. Add them to the broth. When it appears, remove the foam from the broth. Cook the broth for 4-5 hours (or more) over low heat. 40 minutes - 1 hour before the broth is ready, add beef to it.
Step 3
Boil the rice noodles according to the instructions on the package. I had it written: put the noodles in boiling water and cook until tender. Then rinse the rice noodles with cold water.
Step 4
Cut the boiled meat into thin slices. You can also add raw beef to the pho bo. It is clear that in this case you need to take high-quality meat, freeze it slightly and cut it very thinly, it will be cooked directly in a plate with hot broth.
Step 5
Prepare the green onion - cut off the white part, if it is dense enough, you can cut it lengthwise and throw it into the boiling broth for a minute. Grind the green part.
Step 6
Prepare greens, wash and dry everything. Cut the lime into slices. You can also add ginger, cut into strips. Cut the chili into slices.
Step 7
You can start serving the dish. Heat the noodles in the broth. Put it on the bottom of a plate, on top of the meat, the white part of the onion, green onions, chili, ginger, mint leaves, basil, parsley.
Step 8
Pour in broth. Serve separately all the greens, chili peppers, lime slices and fish sauce. Everyone will be able to add the desired amount at will.
