Chicken fried in pesto

Chicken in Italian style. The peculiarity of this recipe is that pesto is not used as a sauce, but as a marinade and a base for breading.

Ingredients
  • 380 ml of vegetable oil for deep fat
  • 100 g bread crumbs
  • 450 g boneless, skinless chicken, cut into small pieces
  • sea salt
  • freshly ground black pepper
  • 70 g homemade pesto

STEP-BY-STEP COOKING RECIPE

Step 1
Pour the oil into a large heavy saucepan and heat to 180C (ideally you need a thermometer here).
Step 2
Place the breadcrumbs on a flat dish or parchment sheet. Rub the chicken with salt and pepper, roll in pesto and breadcrumbs. Press the slices well against the breadcrumbs so that the breading does not crumble.
Step 3
Gently place chicken pieces in boiling oil, reduce heat to medium. Roast for 4 minutes, then turn over and cook for 2 more minutes. The chicken should be completely cooked and golden brown.
Step 4
When serving, place a gravy boat with pesto next to the dish, suddenly someone wants to add.
