Mirza gasemi
Eggplant caviar as it is prepared in Iran. It is better to fry the eggplants over an open fire - then they will have a haze aroma. Serve - not applicable with pita or oriental flatbread. The chef Rahimi Mogadan, who represented Iranian cuisine at the forum "Gastronomic Roads of the Great Silk Road", shared with us the recipe for mirza gasemi (Astrakhan, 2017).
Ingredients
- 2 kg eggplant
- 3 eggs
- 1 head of garlic
- 3 tomatoes
- 1 tsp turmeric
- 150 ml sunflower oil
- salt
- ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Fry the eggplants over an open fire until tender, peel and cut into cubes. Pour boiling water over the tomatoes and peel them, rub through a grater.
Step 2
Chop the garlic and fry in a large skillet over low heat with salt, turmeric and sunflower oil
Step 3
Add the eggplant to the garlic. Slightly fry the mixture, add the tomatoes to it and mix well. Simmer for 15-20 minutes.
Step 4
Break chicken eggs into this mixture and cook for another 5-7 minutes.
