Baked lamb with anchovies and garlic
Leg of lamb baked with anchovies and rosemary will turn out to be exceptionally aromatic and with excellent taste.
Ingredients
- 1 hind leg of lamb weighing up to 3 kg
- 8 fillets of anchovies
- 8 large cloves of young garlic
- 2 sprigs rosemary (leaves only)
- olive oil
- salt, freshly ground black pepper
- ¼ a glass of verjus (sour grape juice), or lemon juice, or white balsamic vinegar
STEP-BY-STEP COOKING RECIPE
Step 1
Preheat oven to 130 ° C (110 ° C in convection mode). Remove all excess fat and films from the lamb. Rub the meat on all sides with salt and pepper and place on a baking sheet lined with parchment.
Step 2
Crush the garlic, but do not peel. Make 8 deep cuts in the meat, each with a clove of garlic wrapped in anchovy fillet.
Step 3
Pour olive oil over the meat, sprinkle with rosemary leaves and massage the meat. Leave to marinate for 20 minutes.
