Vegetarian Caesar

From the classic Caesar in this salad - only Romano leaves and the name itself. Otherwise, this is an exemplary vegetarian dish, where the ingredients are added to the carrot sauce to achieve both fullness of taste and play of textures. Such an unusual author's Caesar will appeal not only to convinced vegans, but also to everyone who loves light and bright food.

  • pea hummus - 56 g
  • Romano salad - 84 g
  • avocado -72 g
  • pumpkin seed oil -12 ml
  • carrot barbecue sauce -100 g
  • pumpkin seeds -12 g
  • baked carrots - 60 g
  • vinegar 9% table - 7 ml
  • sugar - 10 g
  • grated ginger - 4 g
  • garlic - 2 g
  • vegetable oil - 8 g
  • miso-pasta -5 g
  • salt -1 g
  • green peas s / m -39 g
  • kinza -4 g
  • fresh peeled garlic -4 g
  • sesame paste (tahini) - 10 g

STEP-BY-STEP COOKING RECIPE

Step 1
Cooking hummus from peas: blanch the peas, wash the cilantro and leave only the leaves from it, mix in one bowl with fresh peeled garlic and sesame paste. We punch everything in a blender until smooth.
Step 2
Cooking carrot barbecue: bake carrots, peel, and punch all the ingredients in a blender until smooth.
Step 3
Thoroughly wash the Romano salad leaves, dry them with paper napkins. We divide the head of cabbage into 6 parts. Coat each leaf with green pea hummus.
Step 4
Peel the avocado, free it from the bone, cut into slices.
Step 5
Fry the avocado slices on the grill, put them on the romano leaves. Pour carrot sauce on top of the barbecue.
Step 6
Sprinkle the salad with pumpkin oil and sprinkle with pumpkin seeds.
