Pesto pasta in 10 minutes
Blitz recipe for pasta originating from Liguria. It is known that the most delicious pasta comes with homemade pesto, made by the hands of a caring Italian mom. However, Russian mothers cook just as well!
Ingredients
- 450 g "Spaghetti No. 1" Rollton durum wheat
- coarse salt
- 120 g pine nuts
- 120g fresh basil
- 1 clove of garlic
- 70-80 g of finely grated Parmesan cheese
STEP-BY-STEP COOKING RECIPE
Step 1
Cook the spaghetti in a large amount of boiling salted water, following the instructions on the package. Then drain the water from the pasta, 2 tbsp. save the broth.
Step 2
While the spaghetti is cooking, fry 2 tablespoons in a dry skillet. pine nuts. Shake the pan from time to time so that the nuts are fried evenly. It will take 2-3 minutes.
Step 3
Boil water in a large saucepan and dip the basil in it for 30 seconds. Then take it out with noise and put it in ice water so that it retains its color.
Step 4
Garlic, ½ tbsp salt and 70 g of pine nuts, grind in a blender until tender, creamy.
Step 5
Remove the basil from the water and squeeze it out with your hands (don't overdo it, a little water won't hurt the sauce). Add basil to a blender and grind it too - you should get a sauce with herbal crystals, not a homogeneous porridge.
Step 6
Add Parmesan to the sauce (leave 20-30 grams of cheese for serving) and beat with a blender too to mix everything well.
Step 7
Transfer to a large bowl and stir in the water left over from the pasta.
Step 8
Add spaghetti to pesto and stir. Arrange on bowls, sprinkle with toasted pine nuts and leftover Parmesan.
