Shrimp, avocado, ginger and green apple salad
A salad with avocado, green apple and tiger prawns fried in aromatic oil can be an alternative to Olivier on a festive table. Having tasted this salad, you won't even remember about traditional Olivier.
Ingredients
- shrimps (21/25) - 16 pcs.
- olive oil - 40 g
- garlic - 12 g
- avocado - 100 g
- short-fruited cucumbers - 140 g
- sweet red pepper (baked) - 160 g
- apple - 80 g
- iceberg lettuce - 100 g
- fine salt - 8 g
- corn salad for serving
- pickled ginger -20 g plus for serving
- mayonnaise - 180 ml
- tobiko caviar - 10 g plus for serving
STEP-BY-STEP COOKING RECIPE
Step 1
Peeled shrimps (4 pcs. With a tail, 12 pcs. Without tails) fry until tender and slightly golden in color in a pan in heated olive oil with the addition of crushed garlic clove. Season with salt.
Step 2
Cut fried shrimp with tails, avocado, cucumber, baked bell pepper and apple into 0.5 x 0.5 cm cubes. Cut iceberg lettuce into 0.5 x 0.5 cm pieces.
Step 3
Prepare the sauce. Finely chop the pickled ginger, freed from excess liquid. Combine all sauce ingredients in a bowl and stir until smooth.
Step 4
In a bowl, combine the chopped ingredients, salt, season with sauce, mix gently.
