Grilled chicken salad with grapes
Chicken salads are very easy to prepare. It is enough to have on hand the leftovers of fried or boiled chicken, or a piece of grilled chicken - and you can already "create". A bunch of grapes or an apple, a handful of nuts or seeds, a little feta or cottage cheese - and now you have a new dish in front of you. Add your favorite greens to the salad and serve.
Ingredients
- 100 g salad platter
- 300 g chicken breast fillet
- 300 g red grapes
- 1/2 cup walnuts
- half a red sweet onion
- 50 г Arla Apetina Soft
- 1/2 tsp dried thyme
- 1 tbsp. l. olive oil
- salt, freshly ground black pepper
- 1/3 cup olive oil
- 2.5 tbsp. l. balsamic vinegar
- 1 st. l. Teddy bear
- 1.5 tsp. dijon mustard
- 1 clove of garlic
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Beat the chicken fillet slightly so that it becomes even thick. Rub with salt, pepper and dried thyme and brush with olive oil.
Step 2
Preheat a grill pan and fry the fillets until tender, 4 minutes each. from each side. Transfer the fillets to a plate, cover with foil and let sit for 5 minutes. Then cut into thin slices.
Step 3
Cut the grapes into halves, remove the seeds. Peel the onion and cut into thin half rings, rinse in cold water and pat dry. Chop the walnuts coarsely.
Step 4
For dressing, peel and chop the garlic, mix with the rest of the dressing ingredients and beat well.
Step 5
Place the salad platter, grapes, chicken fillets and onions in a salad bowl, pour over the dressing and stir. Sprinkle with finely crushed brine cheese and walnuts and serve.
