Viennese turkey schnitzel

Vienna schnitzel is a very thin but large piece of meat fried in an egg and breadcrumbs. It can be made from veal, turkey, or pork.

Ingredients
  • 2 flat slices of turkey breast fillets, 150 g each
  • 50 g flour
  • 100 g small bread crumbs
  • 1 egg
  • melted butter
  • salt, freshly ground black pepper
  • lemon for serving

STEP-BY-STEP COOKING RECIPE

Step 1
Cut the edges of the meat pieces (cuts approximately 3-4 mm deep every 1.5 cm) so that the edges do not pull together when frying.
Step 2
Place each piece between two sheets of cling film and beat with a fist or the handle of a heavy knife (not with a hammer, the hammer will tear the meat) to a thickness of 4–5 mm.
Step 3
Sprinkle flour evenly on a plate, season with salt and pepper. Pour crackers into another plate. Break an egg into a bowl and beat it lightly with a fork.
Step 4
Put the largest frying pan on the fire, put the oil, let it heat up. Dip the meat in flour, shake off the excess. Then dip in the egg, let the excess drain. Finally, roll in breadcrumbs.
Step 5
At this point, the oil should have warmed up very well. Place both schnitzels in a skillet and fry for 3 minutes. from each side. Place on paper towels to absorb excess oil and serve with lemon wedges.
