Airy sweet potato donuts
Potatoes can be used to make not only a main dish and salad, but also such a donut snack. I took sweet potatoes (yam). The donuts are incredibly tender and airy. If you add more sugar, they will be sweet (sprinkle them with powdered sugar and cinnamon). My donuts are savory, sweet and salty, you can serve them with various appetizers or as an accompaniment to the main course. Help yourself!
Ingredients
- sweet potato 3 pcs.
- dry yeast 5 g
- flour 150 g
- salt 0.5 tsp
- sugar 1 d.l.
- mayonnaise 1.5 tbsp.
- eggs С0 1 pc.

Step 1
Basic ingredients for donuts. Sweet potatoes, flour, yeast, salt, sugar.

But, before tackling the dough, let's prepare the base - sweet potato puree. Peel the potatoes, boil them for 20 minutes with the addition of salt. Add mayonnaise and an egg to the hot potatoes and blend with an immersion blender. If there are small pieces of sweet potato left, no big deal.
Step 3
Add salt, sugar, flour, yeast to the slightly cooled puree.
Step 4
Knead the thin dough. Leave in a warm place for 30 minutes.

The dough is doubled. Let me remind you that it should be liquid, it should be put in butter with a spoon.
Step 6
Heat the vegetable oil well over medium heat. Pour oil so that the donuts float in it. We spread with a dessert spoon in the heated oil. Fry donuts until golden brown for 3.5 minutes. Transfer the finished ones to a paper towel to remove excess fat.
Step 7
Serve donuts with fresh cucumber, caramelized carrots and champignons-fries.
