Aspic from two types of meat
Aspic for many is a classic New Year's dish. There are a lot of recipes for its preparation. In this recipe, boneless beef thigh and pork shank are used to prepare tasty and healthy jellied meat. Cooking is very easy. While the meat is being cooked, you can do a lot of things: decorate a Christmas tree and watch a movie ... Everyone will be happy with the result.
Ingredients
- beef thigh 1 pc.
- pork knuckle 1 pc.
- onion 2 pcs.
- carrots 1 pc.
- bay leaf 3 pcs.
- ground black pepper 1 tsp
- clove of garlic 3 pcs.
- salt 1 tbsp
STEP-BY-STEP COOKING RECIPE
Step 1
Rinse the meat thoroughly. Peel the onions and carrots. Prepare garlic, spices.
Step 2
Place the meat in a large pot of cold water. I have a 6-liter one, so my ingredients are designed for this volume. The meat must be completely covered with water. Bring the broth to a boil over medium heat.
Step 3
After the broth has boiled, we continue to cook the meat over low heat for about 8 hours. Remove foam and fat from the surface as they appear.
Step 4
Two hours after boiling, add carrots, onions and garlic to the broth.
Step 5
An hour before the end of cooking, add bay leaf and coarsely ground black pepper to the broth.
Step 6
Before the end of cooking, add salt to the broth and remove the pan from heat.
Step 7
We take out the finished meat from the broth, put it on a plate. Vegetables from the broth will no longer be useful to us, we throw them away.
Step 8
Separate the meat from the bones and put it on a cutting board. We remove the veins and cut the meat across the fibers.
Step 9
Stir the meat to get a uniform composition and put it in prepared forms.
Step 10
Pour the broth into the molds through a fine sieve, cover with lids and leave for some time at room temperature. Then we put it in the refrigerator for the jellied meat to solidify completely.
