Aspic meat of poultry and pork
This traditional dish has long been prepared in Russia on big holidays. And until now, for most people, jellied meat is an indispensable snack on New Year's holidays.
Ingredients
- chicken 1 pc.
- pork knuckle 1 pc.
- salt 1 tbsp
- onion 1 pc.
- bay leaf 1 pc.
- allspice peas 6 pcs.
- black peppercorns 6 pcs.
- carrots 1 pc.
- water 4 liters
- garlic 1 pc.
STEP-BY-STEP COOKING RECIPE
Step 1
Wash the chicken well in advance, remove the entrails, scrape the shank well with a knife. Pour water over the meat. Leave for a few hours.
Step 2
Put the meat in a saucepan, where the jellied meat will be cooked, pour in water so that it completely covers the meat. When the jelly boils, it is advisable to drain the first water. Wash the meat, put it back in the pot and add water. Add carrots and onions. I don't peel the onions, I just wash them. The onion skins will give the broth a golden hue.
Step 3
Remove vegetables with a slotted spoon. Take out the meat and free it from the bones. Divide the meat into small pieces. Peel the garlic, pass through a press. Mix garlic with meat. Put the meat in jellied meat tins. Pour the broth strained through a sieve.
Step 4
Put the jellied meat in the refrigerator for solidification for 4-5 hours
