Beetroot pancakes with vegetables and curry sauce

Vegetables are not a traditional filling for pancakes. But in vain. You just need to cook them correctly, and then the useful will become tasty.

Ingredients
  • cream 33% - 150 ml
  • coconut milk - 200 ml
  • turmeric - 4 g
  • curry - 15 g
  • ground red paprika - 4 g

  • chicken egg - 1 pc
  • sugar - 0.3 tbsp
  • milk 3.2% - 200 ml
  • wheat flour - 100 g
  • baking soda - 1 g
  • salt to taste
  • vegetable oil - ½ tbsp.
  • peeled boiled beets - 50 g
  • fresh peeled pumpkin - 120 g
  • fresh rosemary - 1 g
  • fresh thyme - 1 g
  • boiled potatoes - 400 g
  • peeled carrots - 200 g
  • fresh peeled asparagus - 60 g
  • broccoli - 100 g
  • peeled garlic - 20 g
  • peeled onions - 40 g
  • hot red pepper - 15 g
  • green peas s / m - 100 g
  • olive oil - 20 g

STEP-BY-STEP COOKING RECIPE

Step 1
Cut the pumpkin into small pieces, put on a baking sheet, brush with olive oil, add rosemary and thyme. Put in the oven, preheated to 180 degrees, for 30 minutes.
Step 2
For pancakes. Beat eggs and sugar in a bowl. Heat milk, salt and mix thoroughly with beaten eggs and sugar. Gradually add flour to the resulting mixture, stirring constantly. Add baking soda, salt to taste and vegetable oil, mix.
Step 3
Grate the beets on a fine grater to get juice (squeeze the juice in a juicer), add to the dough. Mix.
Step 4
Preheat a frying pan. Fry the pancake on both sides until golden brown.
Step 5
Prepare the filling for the pancakes. Cut potatoes, carrots, broccoli, asparagus into small pieces. Finely chop the onion, garlic and chili pepper.
Step 6
In a preheated skillet in olive oil, fry potatoes, carrots, broccoli, asparagus, onions, garlic, chili peppers, green peas and baked pumpkin until golden brown;
Step 7
Then add coconut milk, cream, turmeric, curry, paprika, cumin, salt and pepper to your taste. Simmer for 5 minutes.
Step 8
On the finished pancake, folded in half, put the filling of vegetables, fold into a triangle. Top with a creamy sauce in which vegetables were stewed.
