Duck legs with pumpkin puree
Ingredients
  • duck leg - 4 pcs.
  • olive oil - 60 ml
  • pumpkin - 600 g
  • dry red wine - 300 ml
  • cinnamon, star anise, sugar - 50 g
  • chicken broth - 100 ml
  • bay leaf - 1 pc.
  • salt, pepper - 10 g

STEP-BY-STEP COOKING RECIPE

Step 1
Fry the duck legs in olive oil in a roaster or a heavy saucepan, salt and pepper.
Step 2
Fry for 3 minutes, pour in 100 ml of chicken broth. We make the fire a little quieter than average, add bay leaves, salt, pepper, cover and simmer for 1-1.5 hours until tender.
Step 3
Put the finished duck on a baking sheet and send it to the oven for 5-7 minutes, bake until golden brown.
Step 4
Boil the pumpkin until tender, and then punch in a blender. Add salt and pepper.
Step 5
For wine sauce, take red dry wine, cinnamon, star anise and sugar - bring to a boil and evaporate.
Step 6
Put the pumpkin puree on a plate, on top - a duck leg. Pour wine sauce over the dish.
