Mexican walnut soup with chipotle
If you love spicy, unusual and incredibly hearty dishes, then this recipe for Mexican soup will suit your taste.
Ingredients
- 200 g very fresh walnuts from the last harvest
- 1.5 l chicken broth
- 100 g chili chipotle
- 4 tsp tomato paste
- 1 clove of garlic
- 1 small onion
- 50 g butter
- salt
- fresh chili for serving
STEP-BY-STEP COOKING RECIPE
Step 1
Peel and chop the onion. Melt the butter in a heavy-bottomed saucepan and sauté the onions until transparent, 5 minutes.
Step 2
Peel and chop the garlic, add it to the pot along with the tomato paste, cook for 2-3 minutes.
Step 3
Place the nuts in a blender, add the chipotle along with 1 tbsp. l. liquid from a jar and beat until smooth.
Step 4
Pour the contents of a blender into a saucepan, mix well, bring to a low boil, salt and cook for 1 minute. Garnish with strips of chipotle, chili and walnuts when serving.
