Chicken with mushrooms, puffed potatoes and truffle
If you really want to make a familiar dish a holiday, you can cook chicken with mushrooms and airy potatoes. Choose forest mushrooms, boil potatoes with spices and rub in mashed potatoes, adding truffle paste to it. Such a treat simply requires at least a little black dress and a glass of champagne.
Ingredients
- chicken breast - 200 g
- chicken thigh - 250 g
- chicken wing - 150 g
- butter - 250 g
- white sherry (white wine) - 200 ml
- chanterelles - 15 g
- pickled mushrooms (milk mushrooms, honey mushrooms) - 20 g
- young potatoes - 650 g
- salt to taste
- milk - 180 ml
- truffle paste to taste
- shallots - 45 g
STEP-BY-STEP COOKING RECIPE
Step 1
Season the chicken with salt and pepper, fry in a saucepan in butter, turn over and add white sherry. Cover with a lid, after 2 minutes remove the wings, after 5 minutes - the thighs, after another 5 minutes - the breasts. Strain the remaining liquid - for the sauce.
Step 2
Fry the chanterelles in butter, add coarsely chopped pickled mushrooms to them.
Step 3
Separate the cooled chicken pieces from the bones. Fry again on the skins in a saucepan, in butter until a beautiful color, turn over and add the sauce. After 5 minutes add the fried mushrooms.
Step 4
Boil the potatoes in their skins with thyme, garlic and salt, then peel, and while hot, quickly rub in mashed potatoes.
Step 5
Add salt, milk, butter, truffle paste and golden shallots to the puree.
