Chicken in Coconut Curry Sauce

Chicken curry has become a common dish for us, fortunately, curry can be bought everywhere. Try making a curry sauce with chicken broth and coconut milk, adding vegetables to the meat, and you have another version of this popular dish.

Chicken in Coconut Curry Sauce
Ingredients
  • chicken breast - 100 g
  • vegetable oil - 15 ml
  • vegetable mix (zucchini, eggplant, red bell pepper) - 100 g
  • coarse sea salt - 0.5 g
  • curry seasoning (powder) - 2 g
  • yellow curry paste - 10 g
  • coconut milk - 70 ml
  • chicken broth - 50 ml
  • quince - 1 g

STEP-BY-STEP COOKING RECIPE

Step 1
Cut the chicken breast across into thin slices or 5 mm thick cubes.
Step 2
Cut the courgette and eggplant into half rings 5 mm thick. Sweet peppers - in small triangles 3 cm long.
Step 3
Preheat a frying pan, add vegetable oil. Fry the chicken breast on all sides in heated oil (about 1.5 minutes). Move the fried meat to the edge of the pan.
Step 4
Add the vegetable mixture to the pan, season with salt, add curry powder (1 g) and fry for 1 minute. Combine with meat.
Step 5
Add sauce ingredients: coconut milk, chicken broth, curry paste, and leftover curry powder. Mix everything and fry for another 30 seconds until the meat is fully cooked and the sauce thickens. Remove from heating.
Step 6
Put the finished dish on a plate and garnish with cilantro sprigs.
