Champignons with vegetables
Vegetable stew with mushrooms is the most suitable option for a winter table and for those who are fasting or not eating meat. Any housewife can cook a simple, rustic-style dish.
Ingredients
- 500 g champignons
- 200 g frozen green peas
- 300 g frozen green beans
- 2 medium potatoes
- 150 g small shallots
- 3-4 stalks of green onions
- vegetable oil
- 1 tsp curry
- 1/2 tsp peppers
- salt to taste
STEP-BY-STEP COOKING RECIPE
Step 1
Pour boiling water over the bean pods and cook over very low heat for 2 minutes. Drain the boiling water and immediately pour very cold water over the beans to stop the process. Throw in a colander and dry.
Step 2
Boil unpeeled onions in boiling water for 5-7 minutes, discard in a colander, dry, then peel and cut in half.
Step 3
Cut the potatoes into very thin slices. Cut the mushrooms into large pieces. Fry in 3-4 tablespoons. butter almost until cooked.
Step 4
Add the onions and mushrooms, fry over low heat, stirring occasionally, for 10 minutes. Add curry and paprika.
Step 5
Add peas and beans and cook, covered, 2 minutes. Chop green onions. Season mushrooms with vegetables, sprinkle with green onions and serve
