Chicken baked with lemongrass in coconut milk
Ingredients
- 1 chicken, 1.5 kg
- 6-8 lemongrass stems
- 1 head of garlic
- 1 lemon
- stems of 1 bunch of cilantro
- 2 jars (400 ml) of coconut milk
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Preheat oven to 190 ° C. Rub the inside and outside of the chicken with salt and pepper. Leave it on for 15 minutes.
Step 2
Break the thicker stems with a hammer or heavy knife handle. Crush and peel the garlic. Wash the lemon with a brush, cut it lengthwise into slices, remove the seeds. Place a couple of lemongrass stalks, lemon wedges, and garlic cloves inside the chicken.
Step 3
Whisk the coconut milk until smooth. Pour the coconut milk into a roasting pan (roaster, rooster, heavy-walled saucepan with heat-resistant handles). Add the remaining garlic, lemongrass, lemon, and cilantro stems. Bring to a boil over high heat.
Step 4
Place chicken breast side down in hot milk. Bake the chicken in the oven for 30 minutes. Turn gently and bake until tender, about 40 more minutes.
