Chicken with grapes and rosemary

We recommend using a very successful combination of grapes and rosemary for cooking chicken and chicken baked in the oven. Such a filling will never be dry and tasteless.

Ingredients
  • 1 chicken, weighing 1.2-1.4 kg
  • 500 g seedless medium white grapes
  • 2-3 sprigs of rosemary
  • olive oil
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Preheat the oven in convection mode to 200 ° C (and in top-bottom mode - to 220 ° C). Dry the chicken inside and out with paper towels, remove excess fat from around the neck and tail, and chop finely together with 10-12 rosemary leaves, 0.5 tsp. salt and 0.5 tsp. pepper.
Step 2
Rub the inside of the chicken with this mixture and place so many grapes inside that there is almost no free space (but do not forcefully stuff!). Find the chicken with salt and pepper, then butter.
Step 3
Line a baking dish with parchment and olive oil. Place rosemary sprigs and some grapes on the bottom. Place the chicken breast-side down on it. Place in the oven for 20 minutes.
Step 4
Reduce oven temperature to 160 ° C. Spread the remaining grapes around the chicken, turning them breast-side up. Drizzle with more olive oil and bake until the meat is tender, about 40 minutes. Before serving, let stand, loosely covered with a sheet of foil, for 10 minutes.
