Chicken Leek Pie with Brie

To enjoy a delicious pie for lunch or dinner, you need very little: a couple of chicken fillets, leeks and a little brie cheese. And now before you is already a golden puff pastry pie with a scalding, melting filling. On weekends, you can tinker and prepare the dough yourself, and in the evenings on weekdays, ready-made puff pastry from the nearest store will help you out.

Chicken Leek Pie with Brie
Ingredients
  • 500 g of puff unleavened dough
  • 400 g chicken breast fillet
  • 100 g brie cheese
  • 1 stalk of leeks (white and light green parts)
  • 3 cloves of garlic
  • 125 ml white wine
  • 100 ml chicken broth
  • 2 tbsp. l. starch
  • 8 sprigs of parsley
  • 1 egg
  • 25 g butter
  • salt
  • freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Peel the garlic and chop finely. Cut the leeks in half lengthwise, rinse and cut into thin half rings. Cut the chicken fillet into large cubes. Chop the parsley.
Step 2
Melt the butter in a deep frying pan, add the leeks and garlic, and stir-fry for 8 minutes until soft. Add the chicken fillet and continue cooking for another 5 minutes. Pour in wine and broth and simmer for another 5 minutes. Season with salt and pepper.
Step 3
Combine the starch and 1/4 cup cold water and add to the boiling skillet. Stir, cook for 2 minutes, until thickened. Add parsley at the end. Remove from heat and cool slightly.
Step 4
Preheat oven to 200 ° C. Line a baking sheet with baking paper.
Step 5
Divide the dough into two equal pieces and roll lightly on a floured surface into two equal rectangles or squares.
Step 6
Take the first sheet of puff pastry and place on a cutting board. Leaving the bead 4 cm wide on all sides, make 8 horizontal slots.
Step 7
Put the second sheet of dough on a baking sheet, lay out the filling, stepping back about 4 cm on all sides from the edge. Slice the brie into thin slices and place over the filling.
Step 8
Beat the egg lightly and use a brush to brush over the edges of the dough. Cover the cake with a second sheet of dough and pinch the edges with a fork. Brush the surface of the cake with an egg. Place the pie in the oven and bake for 20 minutes, until golden brown.
Step 9
Remove the finished cake from the oven and after 5 minutes. cut into 4 pieces. Serve hot.
