Chocolate muffin with prunes

We dedicate this cupcake to all chocolate lovers. Not very sweet dough with a velvety texture sets off sweet prunes with a light smoky aroma, which perfectly emphasizes the chocolate taste. According to the recipe, a rather large cake is obtained, but it is perfectly stored, becoming more and more tasty every day.

Ingredients
  • 250 g flour
  • 200 g butter
  • 250 g of sugar
  • 4 eggs
  • 6 tbsp. l. cocoa
  • 100 g of chocolate
  • 150 g prunes
  • 100 ml cognac or brandy
  • 2 tsp vanilla extract
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 100g chocolate to cover

STEP-BY-STEP COOKING RECIPE

Step 1
Cut prunes into small pieces and soak in cognac, leave to soak for at least 8 hours.
Step 2
Preheat oven to 200 ° C. Brush with butter and flour a muffin pan with a tube in the middle and about 2.4L.
Step 3
Melt the chocolate in the microwave or water bath and cool slightly.
Step 4
Use an electric mixer to beat the butter and sugar until a light cream. Add melted chocolate and vanilla extract and whisk again. While whisking, add 1 egg at a time, each time waiting for the egg to completely mix with the butter mixture.
Step 5
Sift flour with cocoa, baking powder and salt and add portions to the butter mixture. Finally add the prunes and stir the dough with a spatula.
Step 6
Place the dough in the prepared pan and bake for 35-40 minutes, until tender. Cool cake in pan, 10 minutes, then turn onto wire rack and cool completely.
Step 7
Melt the chocolate to cover and pour over the cupcake. Leave until solidified.
