Cream cheese soup with chicken
There is a welcome meal. Food, the love for which does not go away over the years, but only becomes stronger. Cheese soup is from this story. The same cheese soup from childhood. With processed cheese “Druzhba” and juicy chicken. And to make it just like mom's, add some croutons to the soup. You can make them yourself by drying the bread in the oven.
Ingredients
- chicken fillet 400 g
- chicken broth 300 ml
- processed cheese 200 g
- carrots 1 pc.
- onion 1 pc.
- potatoes 1 pc.
- garlic (clove) 1 pc.
- semi-hard cheese 80 g
- parsley (twigs) 3 pcs.
STEP-BY-STEP COOKING RECIPE
Step 1
Cook the broth for the cream cheese soup. You can do this beforehand and store the broth in the refrigerator. Then the soup will be ready in just 15 minutes.
Step 2
Bring the broth to a boil in a saucepan ahead of time. Chop the onion finely. Chop the garlic finely. Cut the carrots into 1 x 1 cm cubes. Cut the potatoes into large 2–3 cm cubes. Heat the pan with a drop of vegetable oil. Fry the onions for 1-2 minutes. over high heat until golden brown. Add carrots. Cook for another 2-3 minutes. Add garlic at the very end. Transfer all vegetables to the boiling broth. Cook for 10 minutes. over medium heat.
Step 3
Meanwhile, fry the chicken breasts for serving. Preheat a skillet with a drop of vegetable oil. Place the chicken fillet and cook for 3-4 minutes. over high heat on each side. Then bring the fillet until tender over medium heat, turning occasionally. Approximately 6-7 minutes The chicken fillet will turn out to be very juicy. You can also bring the breasts to readiness under the lid by adding white wine. Or bring to readiness in the oven. Cut the chicken fillet into slices.
Step 4
Add processed cheese to the vegetables. Mix thoroughly. Add semi-hard cheese. Stir. Season with salt and pepper. Heat the soup for another 5 minutes. Whisk the soup with a hand blender. Add the chicken fillet to the cream cheese soup before serving. Garnish with chopped parsley. Enjoy your meal!
