Curd pie with boiled condensed milk
I offer you a delicious, fluffy curd pie made with curd whey and cottage cheese. The filling can be any to your taste: sweet and savory. I have boiled condensed milk.
Ingredients
- whey (curd) 125 ml
- yeast (dry) 1 tsp
- vanillin 1 g
- egg yolk (2 pcs per dough + 1 pc for greasing the cake) 3 pcs.
- salt 1/3 tsp
- butter (soft) 40 g
- honey (liquid) 3 tbsp.
- cottage cheese 75 g
- wheat flour 320 g plus for rolling out the dough
- ghee 2 tbsp
- condensed milk (boiled) 380 g
STEP-BY-STEP COOKING RECIPE
Step 1
Stir dry yeast in warm whey. Add vanillin, egg yolks beaten with salt (2 pcs), warm butter, honey and cottage cheese, rubbed through a sieve. Mix everything well, you can use a mixer.
Step 2
Pour in the sifted wheat flour and knead the dough. Cover the bowl with the dough with cling film and put in a warm place to rise 2-2.5 times, 60-90 minutes.
Step 3
Sprinkle a little flour on the countertop and shape into balls, 8 pieces.
Step 4
Roll out each bun and cut a circle with a tea saucer.
Step 5
Grease a circle with melted butter and lay out the filling, boiled condensed milk.
Step 6
Roll up the circle with a roll and secure the tips, you get bagels. We put all the scraps of dough under a towel so as not to get weathered. From the scraps of dough, I got 4 more bagels and small balls (12 pcs).
Step 7
The middle of the bagel, I decorated with a ball filled with condensed milk (0.5 tsp in each ball).

Cover a baking dish (Ø 26 - 28 cm) with parchment paper and grease with oil. Do not lubricate the silicone mat. Put the blanks in a shape in a circle.
Step 9
Cover the cake with cling film and let it stand. I put it in the oven, turn on the minimum temperature of 40 C and after 30 minutes the cake doubles.
Step 10
Then we increase the temperature by 190-200 C. Grease the pie with whipped yolk with a pinch of sugar and bake until the pie is ready, 20-30 minutes. Check for a dry "match"
