Custard on yolks
Ingredients
- yolk 6 pcs.
- milk 500 ml
- sugar 5 tbsp
- flour or starch 2 tablespoons
- vanilla pod 1 pc.
STEP-BY-STEP COOKING RECIPE
Step 1
Whisk yolks with 1/3 sugar, add flour and stir well.
Step 2
Pour the milk into a heavy-bottomed saucepan. Cut the vanilla pod in half lengthwise, use the tip of a knife to scrape the seeds into the milk, and put the pod in there. Add the remaining sugar and, stirring occasionally, bring to a boil over low heat.
Step 3
Pour the hot milk into the egg mixture in a thin stream, stirring constantly. Stir so that there are no lumps, and pour the mixture through a sieve into a saucepan.
Step 4
Heat the mixture over medium heat, whisking constantly until bubbles appear. Keep on fire, without stopping whisking, for another 2 minutes. and pour into a bowl.
Step 5
To prevent a film from forming on the surface of the cream when it cools, take a cling film and place it on the surface of the hot cream, gently pressing it with your fingers. Cool it down. Take out the vanilla pod before use.
