Duck baked with fruit
Your guests will salivate from just one scent of this duck.
- duck carcass weighing 1.5 - 1.7 kg
- apples 2 pcs.
- pears, hard 2 pcs.
- quince 2 pcs.
- salt to taste
- dry white wine 1 glass
- refined vegetable oil 4 tbsp.
- dried thyme 1/4 tsp
- dried marjoram 1/4 tsp
- ground black pepper 1/4 tsp
STEP-BY-STEP COOKING RECIPE
Wash the duck, dry it, rub inside and outside with salt.
For the marinade, combine wine, oil and spices. Place the duck in a deep bowl and pour over the marinade. Put in the refrigerator for several hours, turn over periodically.
Wash and dry the fruits. Remove seeds from fruits, cut into large pieces. Remove the duck from the marinade, put half of the fruit inside and pour in half of the marinade.
Place the duck in a roasting sleeve, add the rest of the fruit and the remaining marinade. Close the sleeve with clothespins and make several punctures at the top for steam to escape. Bake the duck at 180º until tender. When serving, garnish as desired.
