Eggplant and beef patties
Ingredients
- flour 190 g
- salt 1/3 tsp
- sugar 1/2 tablespoon
- fast-acting dry yeast 1 tsp
- vegetable oil 2 tbsp
- warm water 120 ml
- For filling:
- eggplant 1/2 pc.
- beef 200 g
- salt to taste
- mixture of peppers to taste
- 1/2 red onion
- 1/2 carrots
- ground nutmeg-to taste
- bay leaf 1 pc.
- dried thyme to taste
- celery root 1 pc.
- freshly ground black pepper 1 pinch (s)
- vegetable oil 3-4 tablespoons
- sesame seeds 3 tbsp
- egg yolk 1 pc.
STEP-BY-STEP COOKING RECIPE
Step 1
For the dough, sift the flour into a bowl, add salt, sugar, yeast, stir. Add warm water and knead the dough. Put the dough into a ball, cover with a towel and leave for 35 minutes.
Step 2
Peel the eggplant from the skin, cut into small cubes. Peel the onion and cut into small cubes. Heat the vegetable oil, put the eggplants until light golden brown, then add the chopped onion and fry the vegetables until tender.
Step 3
Put chopped meat, a couple of tablespoons of meat broth in a frying pan with fried vegetables, salt and pepper to taste, cook for 2-3 minutes. Add nutmeg and thyme to taste. Stir. The filling is ready.
Step 4
Roll out the matching dough into a thin layer, cut out circles with a glass. Lay out 1-1.5 tbsp for each circle. filling, pinch the edges of the pie. Place on a baking sheet, greased with vegetable oil.

Let the patties space for 30-25 minutes. Top the patties, brush with whipped egg yolk and sprinkle with sesame seeds.
