Eggplant appetizer with tomatoes
A fragrant spicy appetizer made from eggplants and tomatoes fried until golden brown. A spicy sauce with cilantro, hot paprika, black pepper and fresh garlic gives this appetizer a special taste.
Ingredients
- fried eggplant - 60g
- fried tomatoes - 38g
- eggplant sauce - 15 g
- fresh cilantro - 3g
- fresh tomato - 10g
- lettuce leaf - 7g
- fresh tomatoes - 250g
- chicken egg - 1pc
- flour - 30g
- fine salt - 2 g
- black peppercorns -8 g
- vegetable oil - 60 g
- mayonnaise -200g
- fresh garlic -4g
- fresh cilantro -20g
- hot paprika -1g
- fine salt -2g
- black peppercorns -1g
STEP-BY-STEP COOKING RECIPE
Step 1
Finely chop the clove of garlic and cilantro, add mayonnaise, paprika, salt and black peppercorns. Mix everything - the eggplant sauce is ready.
Step 2
Cut the tomatoes and eggplant into 1 cm thick slices, season with salt and pepper, roll the tomatoes in flour and egg. Then fry on both sides until golden brown.
Step 3
Cut fresh tomatoes into small cubes.
Step 4
Lay the eggplants, fried tomatoes and sauce in layers. Top with fresh tomato cubes and cilantro leaves.
