Farfalle and salmon salad
Ingredients
- 300 g farfalle
- 125 g mascarpone
- 1 tbsp. l. lemon juice
- 1 clove of garlic
- 2 tbsp. l. capers
- 5 sprigs of dill
- 1 long cucumber
- 200 g cold smoked salmon fillet
- 100 g spinach
- salt
STEP-BY-STEP COOKING RECIPE
Step 1
Boil the farfalle in plenty of salted water until cooked, according to the instructions on the package. Throw in a colander and pour over with cold water. Let the water drain, fill with 1 tbsp. l. olive oil. Cool it down.
Step 2
Peel the garlic and chop finely. Wash the capers in cold water, pat dry with a paper towel and chop coarsely. Chop the dill. Combine mascarpone with lemon juice, garlic, capers, dill, salt and pepper.
Step 3
Cut the salmon and cucumber fillets into equal cubes.
Step 4
Mix the farfalle with the mascarpone dressing. Add salmon, cucumber and spinach leaves. Stir gently and serve.
