Homemade sliced cake with dried apricots

Even a novice pastry chef can make a sliced cake. It is enough to bake a large layer of shortcrust pastry and carefully, with a sharp knife, cut into pieces that are convenient for eating.

Ingredients
  • 250 g flour
  • 140 g rice flour
  • 200 g dry
  • 4 st. l. apricot jam
  • 250 g butter and a little more for the mold
  • 100 g of brown sugar
  • 1 tsp vanilla extract
  • 1 tbsp. l. lemon juice
  • icing sugar and zest
  • 1 lemon to serve

STEP-BY-STEP COOKING RECIPE

Step 1
Soak dried apricots in warm water for 1 hour. Then cut into small pieces, put in a saucepan. Add the jam and 100-150 ml of infusion. Cook until tender. Mix with lemon juice and cool.
Step 2
Whisk the softened butter, sugar and vanilla extract until white.
Step 3
Add rice and wheat flour. Knead until smooth. Divide the dough into 2 pieces.
Step 4
Grease a 20x20 cm form with oil. Divide 1 part dough into pieces.
Step 5
Grind the dried apricot filling with a blender, put on the dough. Form a layer from the second piece. Bake at 180 ° C for 25-30 minutes. Cut into 12-16 pieces, cool.
Step 6
Pound the icing sugar with the zest, sprinkle on the cakes.
