Lemon Blueberry Cupcake

Ingredients

- eggs 5
- vanilla sugar 1
- butter 240 g
- flour 300 g
- baking powder 1
- blueberries 300 g
- icing sugar 125 g
- salt
STEP-BY-STEP COOKING RECIPE
Step 1
Remove the zest from the lemon, leave a little for garnish. Mix in a mixer 5 eggs, 1 pack of vanilla sugar, 300 gr. sugar, a pinch of salt, half lemon juice and zest. Beat until lather.
Step 2
Melt 200 gr. butter and pour warm into a mixer. Beat again at low speed.
Step 3
Wash the berries, set aside some for decoration, roll the rest in flour. Add 300 gr. flour, baking powder and berries in the dough. Mix gently until smooth.
Step 4
Grease the mold with butter and put the dough in it. Put the dish in the oven and bake at 170 degrees for 60-70 minutes. After that, gently transfer to a dish and allow to cool completely.
Step 5
For the glaze, beat with 125 gr. icing sugar with lemon juice. Spread the icing evenly over the cake. Garnish with blueberries and lemon zest.
