Люля-кебаб

It is said that the Turks were the first inventors of the kebab. On campaigns, the warriors chopped meat into small pieces, strung them on swords and roasted them over a fire. Traditional lula kebab is made from lamb and onions. In my recipe, lamb is replaced by beef. But thanks to spices and fat tail fat, lula kebab is juicy, aromatic and unusually tasty.

Ingredients
  • beef pulp 1 kg
  • kurdyuk 350 g
  • onion 350 g
  • zira 1 tbsp.
  • ground coriander 1 tbsp
  • ground black pepper 0.5 tbsp
  • salt 2 tsp

STEP-BY-STEP COOKING RECIPE

Step 1
Chop the onion very finely.
Step 2
Also chop the fat tail finely.
Step 3
Grind cumin, black pepper and coriander in a mortar.
Step 4
Mix spices with onions.
Step 5
Add the fat tail to the spiced onion and mix everything thoroughly.
Step 6
Add finely chopped meat, salt to the resulting mixture and mix the minced meat thoroughly. At this stage, you will have to make an effort and spend 10-15 minutes to knead the minced meat. The minced meat should become elastic like dough.
Step 7
Serve ready-made kebab with fresh vegetables and herbs.
