Kokkinisto

There is a stereotype that since Greece is a maritime country, the basis of Greek cuisine is seafood. In fact, the Greeks are notorious meat eaters. Kokkinisto or beef stew (it can be made with veal, chicken or lamb) is one of the pillars of the local culinary tradition. The meat is stewed for a long time at low temperatures to a state almost like a soufflé, and it is very tasty to dip slices of bread in a rich wine and vegetable sauce. The chef Antonis Panusiadis, a participant of the gastronomic forum "Gastronomic Roads of the Great Silk Road" (Astrakhan, July 2017), shared with us the recipe for cockinisto.

Ingredients
  • 1.5 kg of beef
  • 1.2 kg eggplant
  • 1 carrot
  • 1 green pepper
  • 400 g tomatoes
  • 10 ml red wine
  • 10 g tomato paste
  • 1 bay leaf
  • salt
  • allspice

STEP-BY-STEP COOKING RECIPE

Step 1
Chop the onion finely and fry it in a skillet with olive oil. Cut the veal into medium cubes and add to a saucepan with onions.
Step 2
Cut the eggplants into cubes and sauté them in another skillet. Cut the tomatoes into cubes.
Step 3
Add the fried eggplants to the meat saucepan, add tomato paste and tomatoes, add wine, salt, pepper and other spices. Simmer for 1.5 hours.
