Mark Sinclair`s Potato Burger Buns
Ingredients
  • 1 medium potato
  • 50 g egg (1 medium egg)
  • 200 g whole milk
  • 12 g fresh pressed yeast
  • 60 g butter
  • 590 g flour
  • vegetable oil
  • 50 g of sugar
  • 15 g of salt

STEP-BY-STEP COOKING RECIPE

Step 1
Peel the potatoes, cut into medium cubes, place in a saucepan, cover with about 2 cups of boiling water, cook until completely soft, about 20 minutes. Measure out 135 g of boiled potatoes (mash them into smooth puree) and 50 ml of potato broth. Cool it down.
Step 2
Beat the egg lightly. Crumble the yeast. Heat milk to 38 ° C. Combine all ingredients, knead the dough until smooth. Grease a clean bowl and a ball of dough with butter, put it in a bowl, tighten with plastic wrap, punch holes in it and put in a warm place for 20 minutes.
Step 3
Knead the dough for 30 seconds, round into a ball, return to the bowl, cover with plastic foil again, put in a warm place for 1 hour.
Step 4
Round the dough again, place in a bowl, cover and leave in a warm place for 1 hour.
Step 5
Divide the dough into 12 equal portions. Roll each into a ball, place on 2 baking sheets lined with baking paper in a checkerboard pattern, 3-4 cm apart. Cover with plastic wrap and leave to double until magnified for 1–2 hours.
Step 6
Preheat oven to 175 ° C with convection or 190 ° C in top-bottom mode. Bake until golden brown, 14 minutes.
