Potato pancakes with chicken and mushrooms in a creamy sauce
A familiar word for potato pancakes. But where did it come from? Why "draniki"? The fact is that initially all vegetables, root crops were not grated, but grated. This fate befell the potatoes. In fact, potato pancakes have many names: potato pancakes, potato pancakes, and even kakorki. But the winner among the names I think is the Swedish version - "raggmunk", which means "bristly monk". It characterizes, of course, not the cooking process, but the final appearance.
Ingredients
- potatoes 550 g
- onion 1 pc.
- eggs 2 pcs.
- flour 30 g
- garlic 2 cloves
- green onions 2-3 stalks
- chicken fillet (pieces) 300 g
- frozen porcini mushrooms 50 g
- curry 1 tsp
- sour cream 50 g
- cream 20% fat 200 ml
- vegetable oil for frying
- salt and freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
For potato pancakes, peel and grate the potatoes. Grate half of the onion on a fine grater. Combine potatoes and grated onions in a deep bowl. Squeeze excess moisture from the resulting mass with your hands. Season with salt and pepper to taste.
Step 2
In a separate deep bowl, beat the eggs with a whisk or fork. Add them to potatoes. Add flour. Stir.
Step 3
Preheat oven to 180 ° C. Heat a skillet with a drop of vegetable oil. Spread the mixture into the pan with a spoon, pressing down slightly with a spatula, making the pancakes more dense.
Step 4
Fry over medium heat for 4-5 minutes. from each side. Transfer the pancakes to a baking sheet lined with baking paper. Bake in the oven for 10 minutes.
Step 5
Cut the rest of the onion into small cubes. Chop the garlic and green onion finely. Heat a skillet with a drop of vegetable oil. Put the chicken fillet and onion into the pan.
Step 6
Add mushrooms. You do not need to defrost porcini mushrooms in advance. Fry over medium heat for 5 minutes, stirring occasionally. Add curry, sour cream, garlic and cream. Stir. Cover with a lid.
Step 7
Simmer the chicken in the sauce for 5-7 minutes. until ready. Salt. Sprinkle with green onions before serving. Serve the chicken pancakes immediately.
