Primavera salad with mozzarella and green beans

Primavera in Italian means spring. Spring salad with mozzarella, green beans and arugula is simple and easy to prepare. Lemon juice and pine nuts add a touch of zest to it.

Primavera salad with mozzarella and green beans
Ingredients
  • 250 g green beans
  • 300 g of any medium-sized paste (bows, shells, etc.)
  • 1 tbsp lemon juice
  • ½ tsp lemon zest
  • 4 tbsp extra virgin olive oil
  • 3 tbsp toasted pine nuts
  • 2 large mozzarella balls
  • 50 g arugula
  • salt pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Rinse the beans, trim on both sides and cook in boiling water or in a double boiler for 4 minutes. Then put it in ice water for a couple of minutes, drain, dry and cut slightly at an angle into three parts.
Step 2
Boil the pasta until al dente. Drain and let the paste cool.
Step 3
Meanwhile, in a bowl, combine lemon juice, zest and salt. Gradually, whisk vigorously, add the butter.
Step 4
Season the pasta with the sauce, then stir in the green beans, pine nuts, rucola and coarsely chopped mozzarella. Serve immediately.
