White bean and quinoa salad
If you come across a mixture of different types of quinoa (for example, white, red and black), the salad will turn out to be very elegant.
Ingredients
- 1 can (400 g) large white lima beans
- 150 g of quinoa
- 200 g multi-colored cherry tomatoes
- 1 red sweet onion
- 1 green chili
- juice and zest of 1 lime
- 1 bunch of cilantro
- olive oil
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Combine lime juice and zest, salt, pepper and 2 tbsp. l. olive oil. Peel the onion and cut into thin feathers. Put the onion in the resulting mixture, stir and leave for 10-15 minutes.
Step 2
Place the quinoa in a heavy-bottomed saucepan and sauté over medium heat, 2 minutes. Pour in 1.5-2 cups of water, bring to a boil, after 2 minutes. Place the quinoa on a strainer and return to the saucepan. Pour in fresh cold water, cook for 15 minutes, fold over a sieve and cool completely.
Step 3
Cut the tomatoes into halves or quarters. Cut the chili in half lengthways, remove the seeds and partitions, and cut the flesh into thin strips. Chop the cilantro, discard the beans in a colander.
Step 4
Combine all prepared ingredients, season, if desired, with more salt, pepper and olive oil.
