Potato salad with halloumi cheese and green beans

Ingredients
- 200 g potatoes
- 200 g of green beans
- 4 tbsp extra virgin olive oil
- 1 tbsp wine vinegar
- 55 g capers
- 1 bunch of mint
- 1 bunch of dill
- 150 g cherry tomatoes
- 1 tbsp vegetable oil
- 200 g halloumi cheese
- 2 tbsp flour
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Chop the potatoes, place in a saucepan with salted water and simmer for 10-15 minutes.
Step 2
In a separate saucepan, bring the water to a boil, add the chopped green beans and cook for 2 minutes.
Step 3
Combine olive oil and vinegar, then add capers, chopped mint and dill.
Step 4
Add cooked potatoes, beans and chopped cherry tomatoes to the vinegar mixture. Season with salt and pepper. Mix thoroughly.
Step 5
Heat oil in a nonstick skillet. Dip the chopped halloumi cheese in flour and place in a pan, cook until golden brown. Place the finished cheese on a paper towel to remove excess oil.
Step 6
Add halloumi to salad and stir gently.
