Strawberry gazpacho
Strawberry gazpacho is the original take on the classic gazpacho. Strawberries will add a bright flavor to cold Spanish soup and make it more savory in taste.
Ingredients
- 300 g strawberries
- 150 g chopped tomatoes in their own juice
- 3 medium meaty tomatoes
- 2 cucumbers + some for garnish
- half a chili pepper
- 3 cloves of garlic
- 1 small bunch of basil
- 1 tsp white wine vinegar
- salt
STEP-BY-STEP COOKING RECIPE
Step 1
Put the strawberries in a saucepan (leave a few berries for decoration), add the tomatoes in your own juice, garlic passed through a press and finely chopped chili. Heat over medium heat for 3 minutes, cool, pour into a blender.
Step 2
Chop fresh tomatoes and cucumbers, chop the basil leaves and add everything to a blender. Pour in vinegar, salt, beat until smooth.
Step 3
Chill soup in the refrigerator for at least 1 hour and serve garnished with cucumber straws and fresh strawberries.
