Stuffed Peppers with Quinoa

Stuffed peppers can be cooked with more than just rice. Quinoa is an excellent substitute, especially when combined with tender veal.

Stuffed Peppers with Quinoa
Ingredients
  • 4 large bell peppers
  • 2 tbsp. l. olive oil
  • 200 g of quinoa
  • 1 bow
  • 1 clove of garlic
  • 225 g chopped veal
  • 1 tbsp. l. chopped thyme
  • salt

STEP-BY-STEP COOKING RECIPE

Step 1
Cut off the tops of the peppers and peel off seeds and walls. Boil peppers and tops in salted boiling water, 4-5 minutes. Leave to cool.
Step 2
Preheat oven to 200 ° C. Grease a baking dish with oil.
Step 3
Prepare quinoa according to package directions. Heat the oil in a skillet and brown the chopped onion and garlic. Stir in veal and cook, stirring occasionally, until crusty. Combine quinoa with veal and add thyme.
Step 4
Stuff each pepper with the filling and cover with the top. Bake for 20-25 minutes, until the peppers are tender. Serve immediately.
