Eggplant salad with walnut dressing
The most important ingredient in this salad is the nut dressing, which combines spices, roasted peanuts and sesame seeds. This dressing is ideal with salads with fresh herbs and vegetables, giving the dish an expressive spicy taste.
- leaf salad 100 g
- chicken fillet 1 pc.
- eggplant (small) 2 pcs.
- cherry tomatoes 6 pcs.
- nut dressing 40 g
- pumpkin seeds to taste
- salt to taste
STEP-BY-STEP COOKING RECIPE
Tear or chop the lettuce leaves. We put them in a salad bowl.
Cut the eggplants into circles and salt. After 20 minutes, rinse the pieces of eggplant and get rid of excess liquid by squeezing them out. Fry the pieces of eggplant in a frying pan. Put the finished eggplants on lettuce leaves.
Cut the chicken fillet into pieces and also fry in a pan until golden brown. When the chicken pieces are ready, they also need to be put in a bowl of salad and eggplant.
Now add the cherry tomatoes cut in half.
Season the salad with walnut dressing. Gently knead the salad. Sprinkle the salad with fried pumpkin seeds on top.
