Tuna with garlic oil and pear garnish
Ingredients
  • 2 tuna steaks, 180 g each
  • 2 sweet pears
  • 60-80 g butter
  • 100 ml orange juice
  • 1 sprig of rosemary
  • 3-4 cloves of garlic
  • 70 ml olive oil
  • sugar
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Peel and cut the pears into medium cubes. Fry in butter, rosemary and sugar until golden brown.
Step 2
Add orange juice and evaporate by half.
Step 3
Coat the fish with olive oil. Season with salt and pepper.
Step 4
Whisk the remaining butter in a garlic blender.
Step 5
Fry the steaks in a hot frying pan on both sides for 1.5 minutes, leaving undercooked in the middle. Serve hot with a pear garnish topped with garlic oil and rosemary.
