Ingredients
  • 1-2 whole vendaces, total weight approx. 600 g
  • 2 eggs
  • 1 small onion
  • 2 tbsp. l. vegetable oil
  • 150 g sour cream 20% fat
  • a small bunch of parsley
  • 1 egg for brushing

  • 240 g flour
  • 0.5 tsp salt
  • 150 g butter
  • 150 g sour cream 20% fat

STEP-BY-STEP COOKING RECIPE

Step 1
Prepare the dough. Put the knife and board in the refrigerator first to cool them down a little. Pour flour onto a board, add salt and mix with chopped chilled butter into fine crumbs. Pour the crumb into a bowl, add cold sour cream and knead the dough with a spoon. Collect it in a ball, wrap it in plastic wrap and refrigerate while you prepare the filling.
Step 2
Defrost the vendace on the bottom shelf of the refrigerator. For the filling, separate the head and tail from the fish. If you use several fish - keep the tail and head of one. Remove the gills from the head, clean the tail from the scales. Separate the fish from the bones and cut from the skin to make a fillet. Cut it into large cubes.
Step 3
Hard boil the eggs and peel. Cut eggs and onions into small cubes. Heat vegetable oil in a skillet and fry the onion for 3-4 minutes until golden brown. Add the fish and cook for 4-5 minutes until the fish is golden brown. Add eggs, sour cream and finely chopped parsley, stir, salt and chill.
Step 4
Separate a third from the dough and roll both parts of the dough into layers 5 mm thick. Transfer a larger layer to an oval shape according to the size of the fish, form the sides. Place the filling on the dough, place the head and tail on opposite ends of the mold. Cover the filling with a second layer and pinch the edges.
Step 5
Cut off the excess dough (the head and tail should stick out), roll out the layer from the scraps and cut out the circles with a glass. Beat the egg with a fork, brush it over the cake with a brush, overlap the circles of dough like scales on top and brush with the egg too.
Step 6
Preheat the oven to 180 ° C and bake the fish in the dough for 35-40 minutes until golden brown. Serve warm.
