Tuna with watermelon
Tuna with watermelon is essentially carpaccio with watermelon sauce: tuna is cut into thin slices and served with watermelon-celery dressing. A light aromatic appetizer with a very fresh bright taste thanks to watermelon and lime is suitable for a work lunch, and for a romantic dinner, and for a festive table.
Ingredients
- tuna - 400 g
- cucumber - 80 g
- watermelon salad - 80 g
- watermelon sauce - 80 g
- red onion - 8 g
- sibulet onion - 20 g
- watermelon - 200 g
- sauce kimchi - 80 g
- celery root - 40 g
- mint - 4 g
- lime juice - 16 g
- salt - 4 g
- egg yolk - 180 g
- Dijon mustard - 60 g
- vegetable oil - 520 g
- watermelon juice - 212 ml
- lime juice - 40 ml
- sauce kimchi - 40 g
- salt - 8 g
STEP-BY-STEP COOKING RECIPE
Step 1
For watermelon salad: cut the pulp of the watermelon into cubes of such a size that they do not fall apart. Cut the celery root into very small cubes. Mix them in a bowl, add vinegar, kimchi, chopped mint, lime juice and salt. We mix.
Step 2
For the watermelon sauce, grind all the ingredients in a blender. We set to cool for 1 hour.
Step 3
Sprinkle the oval plate with green oil, put the tuna, cut into a thin slice, salt, pepper, put the watermelon salad on it.
Step 4
Roll the cucumber slices into tubes. Cut each tube in half and put it on the salad.
Step 5
Finely chop the red onion into cubes and sprinkle on top. Pour the sauce with a spoon. Sprinkle with green oil and sprinkle with sibulet.
