Turkish baklava (baklava)
Ingredients
  • wheat flour 500 g
  • salt 1 pinch (s)
  • warm milk 1 glass (s)
  • egg 1 pc.
  • melted butter 50 g
  • For filling:
  • walnuts 300 g
  • icing sugar 250 g
  • ground cardamom-to taste
  • FOR SYRUP:
  • water 1 glass (s)
  • sugar 1 cup (s)
  • butter - for lubrication 200 g
  • egg yolk - for greasing 1 pc.

STEP-BY-STEP COOKING RECIPE

Step 1
Sift flour into a bowl, add salt.
Step 2
Make a depression in the center, pour milk, melted butter in there, break an egg. Start kneading the dough first with a spoon, gradually adding flour from the edges.
Step 3
Then knead the dough with your hands, all the flour should go into the dough. Knead the dough first in a bowl, then on the work surface, lightly dusting it with flour (you don't need to add much flour), otherwise the dough will be steep. The dough at the beginning will turn out to be soft, elastic. Place the dough in a bag and rest for 20-30 minutes.
Step 4
While the dough is resting, prepare the syrup. To do this, pour water into a saucepan, add sugar, bring to a boil and cook over low heat for 15 minutes. The syrup should thicken. Let the syrup cool completely.
Step 5
For the filling, grind the walnuts in a blender (you can pass through a meat grinder).
Step 6
Add powdered sugar, cardamom to the chopped nuts, stir.
Step 7
The filling is ready.
Step 8
Divide the finished dough into 22 identical balls.
Step 9
Using a wooden stick, roll each circle into a roll (place the stick on the edge with the filling). You need to roll softly, freely.

Gather the dough on both sides with an accordion and remove the sticks, touch the ends of the dough inward. Place the resulting rolls on a baking sheet greased with butter, slightly tighter to each other. Brush with beaten egg yolk, adding a couple of tablespoons of water to the yolk.

First bake in an oven preheated to 200 degrees for 10 minutes. Then remove the baklava from the oven, brush with softened butter. Cool the oven to 160 degrees.
Step 12
Bake further at 160 degrees for 35-40 minutes until golden brown.
Step 13
Pour the cooled syrup over the hot baklava (right on the baking sheet). Let the baklava cool.
