Turkish Donuts "Lady`s Navel"
Fancy choux pastry donuts soaked in sugar syrup and complemented with chopped pistachios. A funny and even "piquant" name, for sure, comes from the times when seductive concubines performed belly dancing in the Sultan's palace.
Ingredients
- butter 50 g
- water 750 ml
- wheat flour 150 g
- eggs 2 pcs.
- sugar 250 g
- lemon (juice only) 1 pc.
- salt 1 pinch (s)
- vegetable oil 350 g
- pistachio 50 g
STEP-BY-STEP COOKING RECIPE
Step 1
Prepare the syrup: pour water (500 ml) into a ladle, squeeze out the lemon juice and add sugar. Cook for 10-15 minutes after boiling. Cool down.
Step 2
Make donut choux pastry. Pour the remaining water (250 ml) into a saucepan, add butter and a pinch of salt. Boil.
Step 3
Pour in flour, stirring the mass actively. Remove from heat.
Step 4
Allow the workpiece to cool slightly.
Step 5
Then add eggs one at a time, stirring well each time.
Step 6
The finished dough should be smooth and shiny.
Step 7
Form donuts into round donuts with a depression in the middle (press down with your thumb). In size - slightly larger than a walnut.

Pour vegetable oil into a pan and lay out the workpieces.

Fry on both sides until golden yellow.
Step 10
Transfer the finished donuts immediately with a slotted spoon into the previously prepared syrup, dip well.

Grind the pistachios in any convenient way.
