Zucchini pancakes with chicken fillet and orange sauce

There is a legend according to which gods gave the zucchini to people. Long ago, when the men went to sea, the women of a fishing village turned to the gods with prayer. And they asked for a fruit, as soft as the flesh of a fish, the color of the sea on a moonlit night, and with a skin as strong as the shell of a turtle. In response to the prayer, the gods gave the women a courgette. The gods did not present the recipe for squash pancakes. But we will fix this annoying mistake!

Zucchini pancakes with chicken fillet and orange sauce
Ingredients
  • chicken fillet (whole) 300 g
  • egg 1 pc.
  • vegetable oil 100 ml
  • orange juice 150 ml
  • zucchini 1 pc.
  • rosemary 1 vet.
  • corn starch 10 g
  • thyme 1-2 vet.

STEP-BY-STEP COOKING RECIPE

Step 1
Peel the zucchini and grate on a coarse grater. Season with salt to taste. After 3 min. squeeze moisture well. Combine the courgette, egg and flour in a deep bowl. Stir until smooth. Heat a skillet with vegetable oil. Spoon the mixture into round pancakes. Fry over medium heat for 2-3 minutes. from each side. Put the finished pancakes on a napkin to get rid of excess oil.
Step 2
Rinse the chicken fillet and dry with a napkin. Chop the rosemary and one sprig of thyme finely. Brush the fillets with pepper, thyme and rosemary. Season with salt to taste. Preheat a skillet with 1 tbsp. vegetable oil. Fry over medium heat for 3-4 minutes. from each side. Cut the finished chicken fillet into slices.
Step 3
Meanwhile, in a saucepan, combine orange juice and starch. Heat until the sauce thickens. Place the pancakes and chicken slices on a plate. Drizzle with orange sauce. Garnish with a sprig of thyme. Serve immediately.
