Zucchini rolls with cottage cheese
- 4 large zucchini
- 300 g cottage cheese 2% fat
- 3 cloves of garlic
- 4-5 sprigs of green basil
- juice and zest of 1 lemon
- 1 tbsp. l. extra virgin olive oil
- freshly ground black pepper
- salt, optional
STEP-BY-STEP COOKING RECIPE
Preheat oven to 220 ° C. Slice the zucchini lengthways in 1.5 cm thick slices. Pour lemon juice on the zucchini and let sit for 15 minutes.
Shake the liquid off the zucchini and place the slices on a parchment-lined baking sheet. Drizzle with olive oil and place in the top third of the oven. Bake until golden brown, about 20 minutes. Cool the zucchini.
Chop the garlic and basil leaves for the filling. Mix with curd until smooth. Pepper, add zest.
Brush each zucchini slice with the curd filling and roll into a roll. Serve immediately or let it brew in the refrigerator, 2-12 hours.
